Chocolate Chocolate Chip Cookie Dough Cupcakes


Who doesn't like cookie dough? Not anyone I know. I've been wanting to try a chocolate chip cookie dough cupcake for some time now and I've finally gotten around to it. I wanted to do something a little different, so I decided to do a chocolate cake instead of a white or yellow cake. For all you chocolate lovers out there, this cupcake is amazing! It's a dark chocolate cake with a chocolate chip cookie dough filling, cookie dough frosting and topped with chocolate chips. You can make your cookie dough from scratch, but to save time I decided to use betty crocker cookie dough mix. Follow the directions on the cookie dough mix, except DO NOT use egg because the cookie dough will remain uncooked. In order to keep the cookie dough from baking and turning into a cookie, roll the cookie dough into the size balls you desire and freeze them for at least 30-45 minutes. 

Once these are firm, put them in the middle of your cake batter and bake your cupcakes. 

I cannot express how yummy these cupcakes are. If you have a cookie dough lover, like my husband, in your house you should definitely try making these. They are super easy! 
WARNING: These are very sweet and addicting. If you are diabetic or dieting- stay away! :)

Chocolate Raspberry

While thinking about what cupcake I wanted to experiment with next, I thought about my dad. I was thinking about one of the last weekends with my parents before my husband and I moved out of state. That weekend my parents and I went to The Cheesecake Factory. When we go, my dad always gets the chocolate raspberry truffle cheesecake, so I wanted to make a cupcake that would resemble his favorite dish and so the chocolate raspberry cupcake was born. This is a dark chocolate cake with a raspberry filling, raspberry buttercream frosting, and is topped with chocolate chips. Although the frosting did turn out a little thinner than I usually like, this cupcake is scrumptious! I do not usually like raspberry, but this chocolate raspberry combination is wonderful! The following recipe is the recipe I found on food.com for the raspberry filling. Not only is it delicious, but it's super easy. This raspberry filling would be great on cakes too. :)

Raspberry Filling
1 1/2 cups frozen raspberries
1 tablespoon cornstarch
2 tablespoons lemon juice
1/4 cup sugar

Heat all ingredients on medium-high heat until thickened. Set aside and cool before use.

White Chocolate Macadamia Nut

Who doesn't love white chocolate macadamia nut cookies!? I do and decided I wanted to try it as a cupcake, so after some research I found a recipe I liked. I usually try to add/take away from a recipe to make it my own, but these were so yummy that I couldn't mess with it. These white chocolate macadamia nut cupcakes are delicious! I found this recipe online and loved it! I wanted to share it with you, so you could try it too.

White Chocolate Macadamia Nut Cupcakes
1 box of white cake mix
1 box white chocolate instant pudding
3/4 cup chopped macadamia nuts (I was only able to find these at Walmart)
1 1/2 cups flaked coconut
4 eggs
1 cup buttermilk
1/3 cup vegetable oil

Preheat oven to 350. Beat cake mix, eggs, buttermilk, oil, & pudding together. Fold in nuts. Fill muffin pan & bake 18-20 minutes. Toast coconut. Frost cupcakes with white chocolate buttercream (recipe below). Garnish with toasted coconut. Keep cold.

White Chocolate Buttercream
2 sticks unsalted butter, softened
2 cups confectioners sugar
3/4 cup white chocolate morsels
3 tablespoons whipping cream

In a large bowl, beat butter & sugar at low speed until fluffy. Add in melted & cooled white chocolate & whipping cream. Beat on high speed for 3-4 minutes. *You will probably want to double this recipe for the above cupcake recipe so you will have enough frosting.

A Different Kind of German Chocolate


German Chocolate- the cupcake that started it all. I tossed around the idea of starting to experiment with cupcakes, so my dad requested that I make some for his birthday. He loves German Chocolate! I wanted to do something a little different than just the normal German Chocolate cupcakes and so it was born. :) This is a German Chocolate cake with ganache filling and coconut pecan frosting. It is all homemade- nothing from a can. If you love German Chocolate, you should try these! Ganache filling makes this even sweeter. This has been voted the favorite cupcake by most that have tried my cupcakes. Strawberry Shortcake

My mom loves strawberries and has been asking for the longest time for me to make her a strawberry cupcake. This is what I came up with. I wanted to do a strawberry shortcake type cupcake, so I decided to do a white cake with chopped strawberries, a strawberry cream cheese frosting, and topped it with a strawberry slice and pink nonpareils. I don't have a recipe to give, because this is something I came up with on my own. This cupcake is so light and yummy! I love you, mama. I hope you enjoy these :)
